Bulalo is a hearty and flavorful Filipino beef soup made with tender beef shank, bone marrow, and a medley of vegetables. Known for its rich and comforting broth, it’s a popular dish in the Philippines, especially in cooler regions like Tagaytay and Batangas.
Ingredients:
2 lbs (1 kg) beef shank with bone marrow
8 cups water
1 medium onion, quartered
2 cloves garlic, crushed
2 ears of corn, cut into 3-inch pieces
2 medium potatoes, quartered
1 small cabbage, quartered
1 bunch of pechay (bok choy)
2 tbsp fish sauce (optional)
Salt and pepper to taste
Instructions:
Step 1: Prepare the Beef, Rinse the beef shank thoroughly under running water. Remove any excess blood or impurities
Step 2: Boil and Skim, In a large pot, combine the beef shank and water. Bring to a boil over medium heat, skimming off any foam or impurities that rise to the surface.
Step 3: Simmer, Add the onion and garlic to the pot. Lower the heat and simmer for 1.5 to 2 hours, or until the beef is tender. If using a pressure cooker, cook for about 45 minutes.
Step 4: Add Vegetables, Add the corn and potatoes to the pot. Simmer for 10–15 minutes, or until the potatoes are tender.
Step 5: Season the Broth, Stir in fish sauce (if using), and season with salt and pepper to taste.
Step 6: Finish with Greens, Add the cabbage and pechay. Cook for another 2–3 minutes, or until the greens are wilted but still vibrant.
Step 7: Serve Hot, Transfer to a serving bowl and enjoy hot with steamed rice and a dipping sauce of calamansi and soy sauce.
