Pochero is a Filipino stew that features tender pork, vegetables, and sometimes beans, all cooked in a savory broth. It's a comforting, hearty dish that combines the flavors of pork with a variety of vegetables, typically including potatoes, plantains, and cabbage, with a rich tomato-based sauce. It's commonly served with rice and is often enjoyed as a family meal.
Ingredients:
* Pork belly or pork shoulder, cut into chunks
* Cooking oil
* Onion, chopped
* Garlic, minced
* Soy sauce
* Sugar
* Pepper
* Water
* Medium potatoes, peeled and sliced
* Plantain (saba), peeled and sliced
* Cabbage, chopped
* Salt
Instructions:
Step 1: Brown the Pork: Heat the oil in a large pot over medium heat. Add the pork and cook until browned on all sides. This should take about 5-7 minutes. Remove the pork and set it aside.
Step 2: Sauté Aromatics: In the same pot, add a little more oil if necessary. Sauté the onions and garlic until softened and fragrant, about 3 minutes. Add the tomatoes and cook for another 2 minutes, letting them soften and release their juices.
Step 3: Add Liquids and Seasonings: Stir in the tomato sauce, soy sauce, fish sauce (if using), sugar, and pepper. Mix everything well and let it cook for 2-3 minutes to combine the flavors. Add the water and bring the mixture to a boil. Once boiling, lower the heat to a simmer.
Step 4: Simmer the Pork: Return the browned pork to the pot and simmer for 45 minutes to an hour, until the pork becomes tender and the flavors meld together. Stir occasionally and check the tenderness of the pork.
Step 5: Add the Vegetables: Add the potatoes and plantains to the pot. Simmer for another 10-15 minutes, until the potatoes start to soften. Add the cabbage, green beans, chickpeas (if using), and raisins (if using). Continue simmering for another 5-10 minutes, until all the vegetables are tender and the flavors have melded together.
Step 6: Season to Taste: Taste the broth and add salt and pepper as needed. Adjust the seasoning according to your preference.
