Tortang Talong is a Filipino eggplant omelette, known for its smoky flavor and soft texture. It's a simple yet satisfying dish, perfect for breakfast, lunch, or dinner.
Ingredients
* Medium-sized eggplants
* Large eggs
* Salt and pepper, to taste
* Cooking oil
Optional:
* Minced garlic or onion (for added flavor)
* Ground meat or flaked fish (for a hearty variation)
Instructions:
Step 1: Prepare the Eggplants: Grill or broil the eggplants until the skin is charred and the flesh is soft. Let them cool, then peel off the charred skin, keeping the stem intact. Gently flatten the flesh with a fork.
Step 2: Prepare the Egg Mixture: In a bowl, beat the eggs and season with salt and pepper. You can also add minced garlic, onions, or your preferred fillings.
Step 3: Coat the Eggplant: Dip the flattened eggplant into the egg mixture, ensuring it's fully coated.
Step 4: Cook the Tortang: Talong: Heat a pan over medium heat and add cooking oil. Place the eggplant in the pan and pour additional beaten egg on top, if needed. Cook until the bottom is golden brown, then flip to cook the other side.
Step 5:Serve
Transfer to a plate and serve hot with steamed rice and your favorite dipping sauce, such as soy sauce with calamansi.
