Menudo

Menudo is a traditional Filipino dish made with pork, usually including pork belly, intestines, and sometimes liver, all simmered in a savory tomato-based sauce. It’s a hearty and flavorful stew that is often enjoyed during special occasions or as a comfort food. The dish is typically served with steamed rice.

 

Ingredients:

* Pork belly, cut into small cubes

* Pork liver, chopped into small cubes (optional)

* Cooking oil

* Medium onion, chopped

* Garlic, minced

* Medium tomatoes, chopped

* Small red bell pepper, chopped

* Small green bell pepper, chopped

* Potato, peeled and cubed

* Carrot, peeled and diced

* Soy sauce

* Tomato paste or sauce

* Water

* Ground pepper

* Salt

 

Instructions:

Step 1: Prepare the Pork and Liver: Cut the pork belly into small cubes and chop the liver if using.

Step 2:Sauté the Aromatics: Heat cooking oil in a large pot over medium heat. Sauté the onions and garlic until they become fragrant and translucent, about 2-3 minutes. Add the chopped tomatoes and cook until they soften, about 5 minutes.

Step 3: Cook the Pork: Add the cubed pork belly and liver (if using) to the pot. Stir occasionally and cook for about 5-7 minutes until the pork is browned.

Step 4: Add the Vegetables and Seasonings: Add the diced potatoes, carrots, and bell peppers. Stir well to mix everything together. Pour in the soy sauce, fish sauce (if using), tomato paste, and water or pork broth. Add sugar (if using) and ground pepper. Stir to combine.

Step 5: Simmer: Bring the mixture to a boil. Once it starts boiling, reduce the heat to low and let it simmer for about 30-40 minutes, or until the pork and vegetables are tender. Stir occasionally to prevent sticking, and adjust the water as needed to keep it stew-like.

Step 6:Add the Optional Ingredients: After the pork and vegetables are tender, add the green peas (if using). Continue to simmer for an additional 5-10 minutes until the flavors meld together.

Step 7: Season to Taste: Taste the menudo and adjust the seasoning with salt.
