Pancit Canton Omelette w/ cheese

A creative and savory fusion dish that combines pancit canton noodles with eggs and melted cheese, creating a hearty and cheesy omelette perfect for breakfast or a quick snack.


Ingredients:

  • 1 pack pancit canton (instant noodles, any flavor)

  • 2 large eggs

  • 1/4 cup grated cheese (cheddar or your choice)

  • 1 tbsp cooking oil or butter

  • Salt and pepper to taste

  • Optional toppings: chopped scallions or cooked ham


Instructions:


Step 1: Cook the Pancit Canton: Boil water in a pot and cook the pancit canton noodles, then drain the noodles and mix them with the included seasoning packet. Set aside.

Step 2 Prepare the Egg Mixture: Crack the eggs into a bowl, add a pinch of salt and pepper, and beat well.

Step 3: Combine Noodles and Eggs: Add the cooked noodles to the beaten eggs and mix gently to coat the noodles evenly.

Step 4: Cook the Omelette: Heat oil or butter in a non-stick skillet over medium heat. Pour the noodle and egg mixture into the skillet, spreading it out evenly. Sprinkle grated cheese on top and cover with a lid. Cook for 3-4 minutes, or until the bottom is golden and the cheese has melted.

Step 6: Flip or Fold: If desired, fold the omelette in half or carefully flip it to cook the other side for another 1-2 minutes.

Step 7: Serve: Slide the omelette onto a plate, garnish with optional toppings, and serve warm.
